This cake + Bridget Jones + a champagne cocktail = a perfect girls’ night in

An old family recipe, I certainly didn’t name this cake but if you can imagine a mud cake monster and chocolate coated sour cream snow man getting together, that is what this cake tastes like. It’s not the cheapest treat, but it’s quick and easy to put together, and if you’re having dinner guests (who remember what having sex is like), I’m sure they’ll agree that it will finish off your evening better than any man can…. well, on par, at least.

1 vanilla cake mix
1 packet vanilla instant pudding
3 eggs
1/2 cup water
1/2 cup vegetable oil
150 grams grated chocolate
1 cup chocolate chips
250 grams sour cream

1. Preheat oven to 180 C
2. Mix cake mix, instant pudding, eggs, water, oil and grated chocolate together in a large
3. Fold in chocolate chips and sour cream
4. Pour into a well greased ring tin
5. Bake for one hour
6. Sprinkle with icing sugar
7. Serve a generous slice and be prepared to go back for more

Naomi is the editor of Lift e-Magazine and single mum to 19 month old Jim. For the last 12 months she’s documented her journey of single motherhood in her award-winning daily blog ‘365 Days, a Diary of a Newly Single Mum’. When she’s not experimenting with new cookie recipes or planning her next trekking, climbing or snowboarding adventure, you can find her at her desk in the picturesque city of Hobart, Tasmania, Australia, weaving together solo mum stories… whether it be handy tips, triumphs, tragedies, exotic tales of travel or other tidbits to publish here. And before you ask, no, she doesn’t mind the freezing cold Tasmanian winters and yes, she had her second head removed years ago in an unfortunate accident involving a curtain rod and a drunk moose (and no, she’s not interested in hearing from anyone who doesn’t believe that drunk mooses exist in Tasmania… or those who may suppose that ‘mooses’ is not really a word).
