FRIDAY NIGHT FOOD – CARROT CAKE KISSES

I haven’t done much experimenting in the cookie kitchen lately, so I thought it was about time to get back in there. I had a bag of carrots threatening to turn to mush in the bottom of my fridge and had planned to make a carrot cake, but then I decided that was boring, so baked these little fellas instead… I think I made the right choice.

INGREDIENTS:
125 grams butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp cardamom
1 1/2 cups SR flour
1 cup grated carrot
1/2 cup pecans or walnuts

FILLING:
125 grams of spreadable Philadelphia cheese
1 tbs icing sugar

METHOD:
1. Preheat oven to 150 degrees
2. Cream butter and sugar
3. Beat in egg
4. Stir through SR flour and spices
5. Fold in grated carrot and nuts
6. Roll into balls and place on a lined baking tray
7. Bake in oven for 8-12 minutes or until slightly brown, then allow to cool before icing
8. Mix cream cheese and icing sugar together in a bowl, spread onto one side of a cookie, then smoosh another cookie on top of it as per photo
9. Put in face
